Peach Melba muffins

150ml oil
2 eggs
150ml brown sugar
350 ml plain flour
1/2 tsp baking soda
Pinch of salt
200ml prepared peach
50g frozen raspberries

Makes 12 small muffins


Preheat fan oven to 200 ºC.

Prepare peaches. To get 200ml of prepared peaches I used 3 peaches or 250g fresh peaches.

Set a pot of water to boil. Score the bottom of the peaches and put them in the boiling water for 15 seconds. Put peaches straight into cold water and peel off skin. Remove pits and chop into small pieces.


Whisk oil, eggs and sugar together.

Mix flour, baking soda and salt.

Mix all ingredients together and add frozen raspberries at the end.
You can use fresh raspberries too but I would suggest putting them in the freezer for a bit.


Divide into 12 small muffin cases and bake for 20 min or until a toothpick comes out clean.
